Pasta Salad

This is the Pasta Salad recipe I have been making for years.  I usually only make it in the summer but I was in the mood to make it yesterday so you get a new recipe.  Enjoy!

Here’s what you need:
1 – 12oz bag Rotini Pasta (I use the rainbow colors)
1 cup Good Seasonings Italian Dressing (or your favorite kind of Italian Dressing)
3/4 cup red, orange or yellow bell peppers, diced (I used orange and red combined)
1/2 cup red onion, finely diced
3 large garlic cloves, pressed or grated
1/3 cup olives, diced
3/4 cup cheddar cheese, diced into small pieces
3/4 cup Monterey Jack cheese, diced into small pieces
1/2 cup Parmesan cheese, freshly grated

In a large pot, boil pasta according to the package directions.  Drain and rinse with cold water until the pasta is no longer warm.

 
While pasta is cooking, prepare all the rest of the ingredients and place all but the dressing and Parmesan in a large bowl.
 
Add the cool pasta and stir to combine everything.
 
At this point also add in anything you forgot like the olives! haha
 
Now you can add the dressing and stir really well until completely coated.
 
Add the Parmesan and stir well.  Best if chilled for at least 2 hours.

Serves – 6 – 8
