Cheesy Ham and Veggie Quiche

Real men do eat quiche!  My husband loves quiche so when we are burnt out on eggs, pancakes, waffles or breakfast burritos I usually make a quiche.  I made this last week when I had made a ham for dinner (I’ll eventually post the recipe) and wanted to do something else besides sandwiches with the leftovers.  I like quiche because they are so versatile.  I use this same base in all mine and just change the meat, cheese, veggie combos.  Another great thing about quiche is that you can make it for any meal, not just breakfast.  I hope you like this as much as we do.

Here’s what you need:

1 – 9″ pie crust – recipe to follow
5 eggs, room temperature
3/4 cup half and half
1 cup ham, diced
1 cup Cheddar cheese
1/2 cup red bell pepper, finely diced
2 green onion, sliced
1 tsp. salt
1/2 tsp. pepper

Preheat oven to 375 degrees.  Wash and chop all ingredients and grate cheese.  In a large bowl beat eggs until they are combined. 
Mix in the rest of the ingredients and pour into prepared pie shell.
Bake for 50 – 60 minutes or until completely set.  A knife inserted into the center should come out clean and the very middle shouldn’t be jiggly.
