Roasted Red Potatoes

I warned you didn’t I?  About the potato addiction…  Well these are a family favorite that my dad made up several years ago and my brother and I have adapted the original recipe until we got what we thought was perfect.

Here’s what you need:

4 Lbs. red potatoes, cubed into 1-1/2″ cubes, approximately  10 – 12 potatoes, med size
2 packets of Good Seasoning Italian Dressing, just the dry mix
2 sleeves Ritz crackers, crushed
1/2 cup olive oil, plus more for moistness
1 cup Parmesan cheese, freshly shredded


Preheat oven to 375 degrees.  Wash and cube potatoes and place into a large bowl.  Place crackers into a zip top bag and crush with a rolling pin or whatever is handy (I used a jar of jam) and pour over the potatoes. Add the dressing packets and pour in 1/2 cup oil.  Stir until well coated and wet looking.


If mixture is still dry add a little oil at a time until the coating is damp looking.  Pour onto a sprayed (with Pam) baking sheet and bake for 1 hour.  Turn at least once during the cooking.
Once the potatoes are fork tender.  Sprinkle with the grated Parmesan and put back into oven for a minute or two, just until the cheese is melted.

This is the yummy goodness that came out of the oven, and everyone fights over getting all the cheesy goodness on their plates!  I often serve this with pork….Pork Tenderloin (I’ll post an Awesome recipe later) or like I did tonight Pork Roast.
Serves – and this is too funny…..anywhere from 4 – 8 depending on if you have potato loving fiends like I do.
